Recipe: Peanut Butter Cookies

I don’t know why, but peanut butter cookies always felt like a wintry recipe to me. There’s hardly a downside to these cookies: they’re delicious, super simple, and you can almost convince yourself they’re healthy. This recipe makes about 30 3” cookies, enough for a small party or just you… what else are you supposed to do when you’re quarantined? That’s right. Make a lot of cookies. Enjoy!

Ingredients: 

  • ½ cup brown sugar
  • ½ cup white sugar
  • ½ cup butter
  • 1 egg
  • 1 cup peanut butter
  • ½ teaspoon salt
  • ½ teaspoon baking soda
  • 1 ½ cup all-purpose flour
  • ½ teaspoon vanilla

Directions:

  1. Preheat oven to 375° 
  2. Sift brown and white sugar into a small bowl. 
  3. Beat butter until soft.
  4. Add sugar to butter gradually until creamy.
  5. Beat in the egg, peanut butter (creamy works best), salt, and baking soda. 
  6. Sift flour and add to batter. 
  7. Once thoroughly mixed, add vanilla.
  8. Roll dough into small balls (try not to eat too much of it). You don’t have to grease the pan. This recipe makes about 30 cookies.
  9. Once the dough is shaped into balls, make sure they’re spread out enough and press them in a crisscross pattern with a fork.
  10. Bake them at 375° for 15-18 minutes. Enjoy!
