I don’t know why, but peanut butter cookies always felt like a wintry recipe to me. There’s hardly a downside to these cookies: they’re delicious, super simple, and you can almost convince yourself they’re healthy. This recipe makes about 30 3” cookies, enough for a small party or just you… what else are you supposed to do when you’re quarantined? That’s right. Make a lot of cookies. Enjoy!
Ingredients:
- ½ cup brown sugar
- ½ cup white sugar
- ½ cup butter
- 1 egg
- 1 cup peanut butter
- ½ teaspoon salt
- ½ teaspoon baking soda
- 1 ½ cup all-purpose flour
- ½ teaspoon vanilla
Directions:
- Preheat oven to 375°
- Sift brown and white sugar into a small bowl.
- Beat butter until soft.
- Add sugar to butter gradually until creamy.
- Beat in the egg, peanut butter (creamy works best), salt, and baking soda.
- Sift flour and add to batter.
- Once thoroughly mixed, add vanilla.
- Roll dough into small balls (try not to eat too much of it). You don’t have to grease the pan. This recipe makes about 30 cookies.
- Once the dough is shaped into balls, make sure they’re spread out enough and press them in a crisscross pattern with a fork.
- Bake them at 375° for 15-18 minutes. Enjoy!
