Sidney’s Apple Cake Recipe

This is a great wintertime recipe, perfect for a snow day! It only takes about 15 minutes to prepare, and 1 hour in the oven.

Ingredients:

  • 2 ¼ cup flour
  • 1 ½ cup sugar
  • 2 teaspoons baking soda
  • 1 teaspoon ground ginger
  • 2 teaspoons cinnamon
  • ½ teaspoon salt
  • ½ cup melted butter (one stick)
  • 2 teaspoons lemon juice
  • 2 eggs, lightly beaten with a fork
  • ½ cup chopped walnuts (optional)
  • 4 cups peeled and diced apples (about 3 apples)

Mix dry ingredients together. Add butter, lemon juice and eggs; mix well. Add apples and walnuts. It’s going to look like there’s too much apple and not enough dough, that’s ok! The dough expands in the oven, and it comes out to the perfect ratio. Trust the process! Place in an ungreased 9×13 inch pan. Bake at 325 for 1 hour. If desired, sprinkle with confectioners’ sugar.
